It’s time for a Cookie Exchange

Why is it we only find the time during Christmas to have a cookie exchange. I often would like to have a cookie exchange during the month of February when it gets really cold and all you want to do is stay in the house, keep warm and binge on movies and cookies.

My favorite is the Spritz cookie, which I have baked for 35 years. Although I found my recipe in Better Homes and Garden Special Christmas Cookies Edition I added a few changes which I think makes them even better.

Buttery Spritz

1 1/2 cups butter

1 cup sugar

1 teaspoon baking powder

1 egg

1 tablespoon vanilla

4 cups of sifted flour

2 tablespoons milk

Beat butter in large bowl with electric mixer on medium speed for 30 seconds. Add sugar and baking powder and beat well. Add eggs, vanilla and milk until mixed well. Beat in 3 1/2 cups of flour and then stir in 1/2 cup with wooden spoon. Do not chill dough.

Pack the dough into a cookie press. I use a metal cookie press which works the best, trust me I have tried many of the plastic presses, but kept going back to the old fashion metal press. You may want to give it a try.

Put on ungreased cookie sheets and sprinkle with decorative sugars and bake at 375 degrees for 8 to 10 minutes. The edges should be firm but not brown. Remove cookies and cool on wire rack. Makes approximately 4 dozen.
